As a triple malt blend, our Australian Whisky uses specially selected malted grains, including oat & spelt, layered with a subtle component of peat. Individually toasted, fermented, then double pot distilled, a significant focus to then maturing each in small, charred Oloroso sherry casks is commenced. This process each imparts very artisanal expressions, with the broad canvas of flavours then integrated harmoniously. The result is a whisky providing rich notes of black cherries, dark chocolate & burnt orange peel. To the eye, a deep golden amber with a generous, smooth palate delivering distinctive hints of mocha, raisins, carob & stewed rhubarb.
