One of the major defining differences to The Craft & Co is that we distil our own spirits, brew beer and make our own our own cheese onsite at our Collingwood venue. Our other site The Craft & Co Farm in Bangholme, is a 40 acre vineyard and winery. The Craft & Co has been designed to encourage culinary exploration and immersion across different crafts, whether it be pairing our cheese to our beer & wine or learning how to make gin in our distillery, the experience is unique.
Our brewers like to keep things interesting, mixing things up for our taps. Our brewery serves up a
flavour for every palate, from easy drinking beers, to bitter resinous IPA’s, and the weird and wonderful fruited, or wild fermented sours. The brewery also works with other local brewers, so make sure to ask our friendly staff to see who is gracing our taps this week!
Gins, liqueurs, grappa, rum & whisky have all passed through this glorious still to bring products to market. Our distillery has been fundamental in bringing many award-winning craft spirits to life since we opened our doors. An average production day for us produces up to 100 bottles.
Our very own 40-acre vineyard and winery, named The Craft & Co Farm is located only 40km out of Melbourne in Bangholme. We grow the grapes for our wine, as well hops for beer, botanicals for distilling and veggies/herbs for our menu items.
Currently, our onsite micro-dairy, with processing and preserving capabilities, is where our chefs are experimenting with different cheeses, butter, yoghurt and other dairy making methods. Our facility is open to Australia’s best cheesemakers to educate cheese lovers and of course serving up one of life’s greatest pleasures for us all to enjoy!
