Adopting the craftsmanship employed through the process of Solera, the subtle range of dark and light malted grains are double pot distilled, then matured in selected small charred Oloroso sherry casks and a range of specialty cherry and acacia vats.

Rosé Vermouth
Deep copper and garnet in colour through barrel maturation, our Rosé Vermouth is fresh in berry characters, raisins, caramelised figs and a rancio nuttiness. Complex in its aromatics, the middle palate displays freshly cut orange, Christmas pudding, vanilla and elderflower bringing forward the bitters that structure a long, subtle finish.
Amaro
Classically smooth, deep & complex, yet bittersweet with mild notes of bright grapefruit, chicory & aniseed.
Negroni
Born out of our Collingwood distillery, we craft equal parts of award-winning gin, vermouth and amaro into a contemporary Negroni which showcases depth and complexity, yet ultimately refreshing and astute. Salute!
Draught
This bright gold beer has delicate fruity esters aromas. On the palate, the light malt character, gentle bitterness, and crisp finish give a refreshing and easy drinking beer.
Anise
Fragrant star anise, fused with a glorious concoction of fresh orange peel, cinnamon & fennel seed, all conspire to create this lush classic.
2020 Reserve Shiraz
Deep yet vibrant cool climate Shiraz with floral aromatics, mixed with fresh wild berries and a subtle hint of toasted oak, over a full-bodied, smooth frame of forest fruit, mocha and pepper spices. Finishes long, precise and clean. Structured to age well or enjoyed now.
Barrel Aged 8yo Rum
Aged 8 years in the West Indies with final maturation locally in small Oloroso Sherry casks, our premium crafted rum oozes with aromatics of homemade pound cake and maple rice pudding, all complimented by a long toffee-cocoa palate, subtle apricot, ginger and an orange peel finish.
C&C Rose
A blend of Shiraz and Tempranillo grapes. We used both whole bunch pressing and wild fermentation to achieve delicacy and texture. This savoury 2018 Rosé with red berry fruits has a lovely dry finish.
Hazy Pale
Hazy with a creamy head, this juicy beer features tropical aroma of mango, passionfruit, and pineapple as well as some grapefruit. The grapefruit is more present on the palate.
Australian Whisky
As a triple malt blend, our Australian Whisky uses specially selected malted grains, including oat & spelt, layered with a subtle component of peat.
